This recipe is made in a pot over the stove. It’s simple and requires only a pot and strainer. Store the rhubarb mixture in a mason jar or serve in a pitcher.

Ingredients

• 3 cups rhubarb
• 5 cups water
• 1 cup coconut sugar
• 1 teaspoon vanilla
• 2 one-inch cuts of lemon rind
• Store bought or homemade lemonade (plain)

Directions

1. Combine all ingredients in a pot, bring to a boil and simmer for 10 minutes
2. Pour ingredients into a pitcher or mason jar through a strainer and discard pulp
3. Combine 1/3 part rhubarb mixture with 2/3 parts lemonade
