Protein Packed Ricotta Pancakes

Delicious and fluffy pancakes packed with protein and none of the guilt

- 1 cup rolled oats (before blending)
- 1 egg
- 3/4 cup ricotta cheese
- 3/4 cup Greek yogurt
- 1 tsp baking powder
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
In a blender, blend oats until flour like consistency.
Combine all other ingredients in the blender and blend until smooth.
Heat griddle or skillet over medium heat. Spray with cooking spray of choice.
Pour batter onto griddle in 2-4 inch sized pancakes. Flip when bubbles begin to form on top. Cook for another couple of minutes until golden brown.
Serve hot with maple syrup and other toppings or refrigerate and reheat in the microwave.
