Protein Packed Ricotta Pancakes

  • griddle
  • blender

Ingredients
  

  • 1 cup rolled oats (before blending)
  • 1 egg
  • 3/4 cup ricotta cheese
  • 3/4 cup Greek yogurt
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Instructions
 

  • In a blender, blend oats until flour like consistency.
  • Combine all other ingredients in the blender and blend until smooth.
  • Heat griddle or skillet over medium heat. Spray with cooking spray of choice.
  • Pour batter onto griddle in 2-4 inch sized pancakes. Flip when bubbles begin to form on top. Cook for another couple of minutes until golden brown.
  • Serve hot with maple syrup and other toppings or refrigerate and reheat in the microwave.
