Protein-Packed Ricotta Pancakes – fluffy delicious pancakes with a guilt-free twist

It’s Saturday morning and you’ve slept in. You’re ready to enjoy a slow morning and fun plans later. You want to slow down and enjoy a delicious weekend morning breakfast while getting all the benefits of a healthier alternative. This protein ricotta pancake recipe is the perfect option.

Breakfast has always been my favorite time on weekends and I’m a sucker for sweets. Overeating sugary or heavy breakfast splurges usually leave me feeling drained and sleepy. This protein-packed ricotta pancake recipe is the perfect alternative to traditional morning pancakes. These pancakes are light and fluffy but leave you feeling fueled for the rest of your day. Serve them warm with your favorite toppings or refrigerate them and heat them later as a quick and easy on-the-go breakfast.

Although there are many flour substitutes, I have become a huge fan of using blended oats in many of my baking recipes. They tend to have a heavier consistency but in my opinion, they are more filling and energizing. This recipe utilizes oats and Greek yogurt as a healthier substitute for ingredients found in most pancakes. I also use farm fresh eggs from our chickens as well as Mexican vanilla extract purchased from Mexico (similar vanilla extract is linked below). I’m a firm believer that quality ingredients will produce quality recipes but I’m also a believer in convenience, so grab what ingredients are easiest for you.

My number one recommendation for perfect pancakes is an electric griddle. Although I could cook these over the stove or on the griddle attachment for our stove, I like that I can easily control the heat that I’m cooking with on the electric griddle. I’ve linked an electric griddle option that is available for purchase below. One downside is that it does take up some significant kitchen storage space but if it is something you use often then it is a great investment. I also use my ninja blender to first blend the oats until they create an oat flour and to mix the entire recipe. You could purchase oat flour and use less than the amount recommended below and mix all the ingredients by hand or in another sort of mixer.

Ingredients

  • 1 cup rolled oats (before they are ground to flour)
  • 1 egg
  • 3/4 cup Greek yogurt
  • 3/4 cup ricotta cheese
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Directions

  1. In a blender, blend oats until flour like consistency.
  2. Combine all other ingredients in the blender and blend until smooth.
  3. Heat griddle or skillet over medium heat. Spray with cooking spray of choice.
  4. Pour batter onto griddle in 2-4 inch sized pancakes. Flip when bubbles begin to form on top. Cook for another couple of minutes until golden brown.
  5. Serve hot with maple syrup and other toppings or refrigerate and reheat in the microwave.

Customize this recipe with a variety of toppings

I love to experiment with recipes. This ricotta pancake recipe has been my staple pancake recipe for a while but we never get sick of it because I’m always coming up with ways to change it up. A quick and easy way to add flavor is by adding various toppings. These pancakes taste best when topped with homemade maple syrup but can also be topped with maple butter, apple butter, peanut butter or any other nut butter. Jams and jellies also make delicious toppings for a fruity flavor and I love topping with fresh-cut fruit like strawberries, blueberries or blackberries. For a banana-nut flavor trying topping with sliced bananas and walnuts.

I’ve even gotten so brave as to add ingredients to the batter. Some delicious additions include chocolate chips, blueberries, or even rhubarb. I have cooked rhubarb in boiling water and added it to my batter when it is in season. Adding freshly squeezed lemon, poppy seeds and lemon zest is another unique recipe that creates a delicious lemon-poppyseed pancake. The options are truly endless and this recipe is a great start to get creative with your guilt-free pancake breakfast that leaves you feeling energized for whatever your day brings.
