Heat the ground turkey over medium-high heat. Add pre-made taco seasoning or create your own combination. I usually combine smoked paprika, chili powder, cumin, and garlic seasoning salt.
While the turkey is cooking, combine drained corn and green chillies in a pot and heat over the stove.
Combine chipotle sauce ingredients in a blender and blend until smooth. The chipotle chilies in the adobo sauce are very spicy and the combination of Greek yogurt and lime helps cool down the heat.
Heat the corn tortillas over medium high heat. Flip when one side is slightly crispy.
Combine all the ingredients. Top the corn tortillas with Greek yogurt, ground turkey, pico & guacamole, green chili corn and, cheese.
Drizzle a small amount of chipotle adobo sauce on top of the tacos (the chipotle adobo sauce is SPICY so be sure to taste it and add only a small amount). Serve with a lime wedge.
