Chipotle Turkey Tacos

Besides pots and pans for cooking, this recipe requires a blender or food processor. I find it easiest to blend everything in my Ninja blender. Blending the chipotle sauce creates a smooth texture.
Ingredients
Taco Ingredients
- 1 lb ground turkey
- Taco seasoning
- Corn tortillas
- 15 oz can of whole kernel corn
- 4.5 oz can of green chilies
- Pico guacamole (my local grocery stores sells a combined container of freshly made pico and guacamole but you can buy each one individually)
- Plain Greek yogurt to taste in place of sour cream
- Mexican blend cheese
- Lime wedge
Chipotle Sauce
- 7 oz can of chipotle chilies in adobo sauce
- 1/2 – 1 cup plain Greek Yogurt (start with 1/2 cup and work up to 1 cup if needed for consistency)
- 1/2-1 squeezed lime (to taste)
Directions
- Heat the ground turkey over medium-high heat. Add pre-made taco seasoning or create your own combination. I usually combine smoked paprika, chili powder, cumin, and garlic seasoning salt.
- While the turkey is cooking, combine drained corn and green chillies in a pot and heat over the stove.
- Combine chipotle sauce ingredients in a blender and blend until smooth. The chipotle chilies in the adobo sauce are very spicy and the combination of Greek yogurt and lime helps cool down the heat.
- Heat the corn tortillas over medium high heat. Flip when one side is slightly crispy.
- Combine all the ingredients. Top the corn tortillas with Greek yogurt, ground turkey, pico & guacamole, green chili corn and, cheese.
- Drizzle a small amount of chipotle adobo sauce on top of the tacos (the chipotles adobo sauce is SPICY so be sure to taste it and add only a small amount). Serve with a lime wedge.
*Note this recipe makes a much greater quantity of chipotle sauce than what the taco recipe will require. Use the left over chipotle sauce to top eggs, huevos rancheros or other recipes that the flavors would blend well with.
